I definitely could have used the tip about pressing down the peak :) It didn't seem like the insides were too soggy with this recipe (although maybe I just didn't notice once I filled them with the cream), but it's good to know that tip if you are having an issue with that.Kate S.https://www.blogger.com/profile/00576377437893492473noreply@blogger.comtag:blogger.com,1999:blog-15726473.post-51152478371433741552012-08-07T22:04:07.017-07:002012-08-07T22:04:07.017-07:00These ones didn't have a strong egg taste, I d...These ones didn't have a strong egg taste, I didn't think - they didn't have an egg wash, so maybe that was part of it?Kate S.https://www.blogger.com/profile/00576377437893492473noreply@blogger.comtag:blogger.com,1999:blog-15726473.post-21561627567040508162012-08-06T02:24:33.560-07:002012-08-06T02:24:33.560-07:00They look great. First, after you've piped them but before they go in the oven, lightly wet a clean finger and gently press down the peak from the piping bag nozzle. Second, once they're cool enough to handle, pierce them to release the steam and scrape out any soggy dough from the interior. This keeps the profiteroles nice and crisp for maximum contrast with the filling.Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-15726473.post-32885143565119821252012-08-05T13:08:57.443-07:002012-08-05T13:08:57.443-07:00I'm tempted to try these again. I don't know if that's how they are supposed to taste or not, but I didn't like the strong egg taste. Maybe it was the egg wash that made them taste that way. I'll definitely try this or a similar recipe next time. Did you experience any strong egg flavor with these?Jennie P.https://www.blogger.com/profile/01424480099460671700noreply@blogger.com
